Ingredients:
- 25 g of fresh yeast
- 250 g of wheat flour
- 50 g of powdered sugar
- 50 g of butter
- 1 egg
- 2 yolks
- 125 ml of warm milk
- about 150 g of blueberries
- egg yolk + 1 tablespoon of milk (to brush on rolls before baking)
- 1 egg white
- ½ cup powdered sugar
How to make bun with bluberries?
Take the yeast out of the refrigerator and let it rest for about 30 minutes.
After this time, crush the yeast in your hands and pour it into a bowl. Heat up half of the milk (the milk must not be too hot) and pour it over the yeast. Add half a teaspoon of sugar and a teaspoon of flour. Mix everything thoroughly, cover with a cotton cloth and put aside in a warm place for 15 minutes.
Beat the egg and yolks with sugar until fluffy.
Dissolve the butter in a saucepan or small pot (e.g. from the FIRSTset) and set aside to cool.
Sift the flour into a large bowl, add the yeast, the other half of the warm milk, beaten eggs and the cooled butter.
Knead the dough until smooth. When you get the right consistency, cover the bowl with a cotton cloth and set aside in a warm place for 1.5 hours to allow it to grow well.
Then knead the dough for a while on the pastry board, form a ball from it and divide it into 8 parts. Flatten each of them in your hand, place 2 tablespoons of blueberries on it, seal the edges and shape them properly.
Line the baking tray with baking paper, place the little lambs on it at larger intervals, and leave it to rise for about 30 minutes.
Preheat the oven to 180℃ with the top and bottom cooking function on.
Brush the blueberries with beaten egg yolk with a little milk and put them in a preheated oven (we recommend using the NATUR silicone brush for lubrication) for 20 minutes.
After this time, remove them from the oven and set aside until they cool down.
In the meantime, prepare the frosting (based on egg white and powdered sugar) and put them on the biscuits.
