Ingredients:
- 5 egg whites
- 250g of sugar
- 1 teaspoon of potato flour
- 1 teaspoon of wine vinegar
- 375 g Mascarpone cheese
- 250 ml cream 30%
- 2.5 tablespoons of vanilla sugar
- 200 g of raspberries
- 100 g of blueberries
How to prepare fruity mini meringues?
In a bowl, beat 5 egg whites. Then add 1 tablespoon of sugar and mix for a minute. We repeat the action.
When the mass is already stiff, add a teaspoon of potato flour and wine vinegar and mix for 4 minutes.
Line two trays with baking paper. On each of them, we draw circles with a diameter of 8 cm.
We translate the mass into the previously drawn circles.
Preheat the oven to 150°C, turn on hot air and put two sheets inside for 5 minutes.
After 5 minutes, lower the temperature to 100 degrees C and bake the meringues for 90 minutes.
Put the meringues out and set aside to cool.
We prepare the cream.
In a bowl, mix the cream, Mascarpone cheese and vanilla sugar. The mass should be shiny, smooth and creamy.
We put the cream on each meringue through the needle. Sprinkle the cream with blueberries and raspberries.
