The blade hardness of a knife is measured on the Rockwell scale by Nature.53-54 HRCThe Rockwell scale indicates the ability to maintain sharpness over a certain period of time and assesses resistance to mechanical damage and edge overload. Hard knives retain sharpness for a long time, but they are harder to sharpen, less flexible, and more susceptible to cracking and chipping. Each knife should be rigid to precisely cut different ingredients, yet it needs to be elastic enough so that it does not break when changing cutting angles or applying significant pressure. In most cases, the hardness of kitchen knives is stated from 52 HRC, while 57-58 HRC indicates hard steel. The hardness of Gerlach kitchen knives' blades has been adjusted to provide extremely precise and sharp cutting while minimizing the risk of blade breakage during intensive use.

Washing knives in the dishwasher, due to the high water temperature and the action of chemicals, can lead to permanent damage to the blades and handles of knives.
