Line 991A Deco Black is a set of knives.made of high-quality X50CrMoV15 stainless steel with a chromium addition(increases corrosion resistance), molybdenum (decreases steel brittleness), and vanadium (increases wear resistance).

The hardness of the Deco Black knife blade on the Rockwell scale is 53-55 HRC. The Rockwell scale indicates the ability to maintain sharpness over a period of time and assesses resistance to mechanical damage and blade overload. Hard knives retain their sharpness for a long time, are more challenging to sharpen, less flexible, and more prone to cracking and chipping. Each knife should be rigid to precisely cut various ingredients, but at the same time, it must be flexible enough to avoid breaking when changing the cutting angle or applying significant pressure. In most cases, the hardness for kitchen knives ranges from 52 HRC, while 57-58 HRC indicates hard steel. The hardness of Gerlach kitchen knives' blades has been adjusted to provide extremely precise and sharp cutting, while minimizing the risk of blade breakage during intensive use.
