The hardness of the Modern knife blade on the Rockwell scale is54-55 HRCThe Rockwell scale indicates the ability to maintain sharpness over a period of time, as well as resistance to mechanical damage and blade overload. Hard knives retain sharpness for a long time, but are harder to sharpen, less flexible, and more prone to breaking or chipping. Each knife should be rigid to accurately cut various ingredients, yet it must also be flexible enough to not break when changing the cutting angle or applying heavy pressure. In most cases, the hardness for kitchen knives is indicated from 52 HRC, while 57-58 HRC already denotes hard steel. The hardness of Gerlach kitchen knives' blades has been adjusted to provide extremely precise and sharp cutting, while minimizing the likelihood of the blade breaking during intense use.
