Hard knives retain their sharpness for a long time, but are more difficult to sharpen, less flexible, and more prone to cracking and chipping. Each knife should be rigid enough to cut various ingredients precisely, yet flexible enough not to break when changing the cutting angle or applying strong pressure. In most cases, the hardness of kitchen knives is stated from 52 HRC, while 57-58 HRC indicates hard steel. The hardness of Gerlach kitchen knives' blades has been adjusted to provide extremely precise and sharp cutting, while minimizing the risk of the blade breaking during intensive use.
